Chinese the pandemic and take out.
I’ve found Chinese food a need during the pandemic. First most Chinese American’s take the virus seriously. The workers in back and even the workers out front take precautions, plexiglass barriers and mask wearing is required of all who enter.
I prefer takeout to delivery and have yet to have a major issue while waiting for my food. Normally I order online, wait a few minutes and arrive at my pickup time. I seldom wait.
My Favorite Chinese Dishes
I like moo shu, lo mein, special noodle soups, and many appetizers. While in the Memphis area I found some okay Chinese restuarants, but none actually met with my full approval.
The problem. The hot and sour soups. None were just right.
A good Hot & Sour Soup is a requirement.
I never found a great chinese restuarant that didn’t make an outstanding hot & sour soup. The mixture and thickness of mushrooms, tofu is unique. For me the broth needs to be clear and not thickened. The soup needs to be loaded with mushrooms, tofu, a few carrot strings. Peas are not an ingredient of a good hot & sour soup.
When done right it should be hot and a little not overly spicy. It is a just right. It has been a long time since I have found a truly good hot & sour soup. Nothing in my recent travels has excited my senses.
And then I moved to Palm Beach County, FL
In the last several months I have found 2 hot & sour soups that I like. The first is Great Wall Chinese Restaurant. It has the best Hot & Sour soup I’d found in years.
Just when I thought I had finally found a favorite chinese restuarant, I tried Kam Wah. Woo, this hot & sour soup is at least for me perfect. The rest of the menu does not disappoint either.
So I now have 2 outstanding chinese restuarants.
Between my own cooking and these restuarants, I won’t go hungry for a while.
