And Diet
What a horrible topic for this time of year.
At some point I know I’ve talked about my exercise regimen. I truly am in the best shape I’ve been in the last 10 years. But I’m still gaining weight. I’m still gaining weight.
So my next step is to change my diet.
Foods I love.
I love to snack. Cakes, pies, ice cream, chocolate, chips, you name it if it increases my waistline I like it. I’ve averaged about a 2 lbs gain each year since my 1st marriage. I have not overdone anything, but obviously I need to improve what I eat.
So what next? My life is this time of year is Thanksgiving, my birthday, and Christmas. COVID helps me keep my options open, so now would be a good time to start.
South Beach Diet.
I’ve used this briefly in the past. The premise of this diet is to limit sugar intake. While I always limit my sugar intact (at least I try.) Artificial sweeteners don’t appeal to me. I’d rather not use a product which is overly manufactured and created in a lab.
I’ve taken out the cook book and began last night by making a spinach lasagna. Those who know me, know I’m not a complete novice in the kitchen. I’ve lived on my own and fixed my own meals throughout my adult life.
Mom taught me the value of cooking. COVID has made those skills more valuable.
But, I’ve never made lasagna before.
The Lasagna Adventure Begins.
First as I started gathering the ingredients, I realized I did not have enough spinach. I continued on thinking about a solution. And began preparing the noodles.
Dicing garlic and onions, selecting a pan, smaller than called for by the recipe, after all I didn’t have enough spinach. Noodles done, blanch the spinach. I use water filtered by Brita. Currently don’t have enough so need to run more water through.
Let’s substitute portabella mushrooms for the spinach.
Continue dicing. Noodles finished, blanch the spinach. Spinach done saute the onions, till golden brown.
Mix the eggs, cheeses, garlic and spices. Oops no basil. Too late now time to go the market. If I can live without spinach in a spinach lasagna, I don’t need basil.
Time to put this together.
Spinach layer. Cheese mixture layer. Noodle layer. Spinach cheese, Noodles, Portabella mushrooms (raw, the peanut gallery suggests they should be cooked. Oh well too late now), Cheese Noodles, Oops the onions never got into the cheese mixture. Noodles Mozzarella and remains of parmesan springled with onions.
Into the oven cooked for 45 minutes and wait 15.
Success… It tastes good.
No and I don’t consider this a recipe, but it was an adventure. Normally when I cook a dish for the first time, I try to stick to the recipe. So much for the recipe. They are only guidelines.
